Golden Cheesy Toast

Serves 4


For the cheesy sauce:

30ml (2 tbsp) butter

45ml (3 tbsp) cake flour

125ml (½ cup) fresh cream

50g parmesan, finely grated

100g white cheddar, coarsely grated

1 sourdough bread

60g butter at room temperature


  1. For the sauce: Melt the butter in a medium saucepan over medium heat. Add the flour as soon as the butter is melted. Stir with a wooden spoon until it forms a thick paste. Add the cream, parmesan and cheddar. Stir until melted. The sauce should be thick and cheesy. Set aside until needed.
  2. Slice the bread into 8 thick slices and place on a clean chopping board. Spread with the butter and flip so that the butter is on the outside. Top 4 of the slices with the sauce. Top with another slice of bread and also spread with butter.
  3. Heat a medium non-stick pan over medium heat and pan-fry the bread on both sides until golden and crunchy. Repeat with the rest of the bread. Serve warm with the cheese oozing out and glasses of Póngracz Desiderius.
